Can't wait to see what you do with a delmonico. Who was the proprietor of these?

It's the sliced side view that's the money shot! :)

I always freeze meat in a ziplock bag of marinade to prevent freezer burn. IMHO a good steak doesn't need much besides a little salt and pepper so a light brine is adequate. A tablespoon of salt per quart is enough. Or red wine...

Just another steak. Needs to be well-marbled. High heat. Don't cook it too much. I never brine beef.

O/T (unless a possible nothingburger counts as food) but Gateway Pundit has a piece on Trump's latest EO - about succession in the DoD of all things:

Another EO that was signed a couple of days ago on the 10th related to succession of the military. This EO lists the order of succession of the military should the Secretary of Defense die, resign or be unable to perform his duties. The one notable in this EO is that the Chairman of the Joint Chief of Staffs, General Mark Milley, is not on the list.
Might this be significant? This, the last EO re the Christmas Eve holiday and the 18th deadline for Ratcliffe's election foreign interference report and my febrile brain got to thinking about Tet for some reason.

We always used napkin rings. First gifts to our children at birth were engraved napkin rings. I have sent them along for their babies: one DiL was pleased, the other has yet to respond (child will be three next month).
